Ingredients

  1. Use all organic ingredients if possible!!! 1/2 cup GF Oats
  2. 1/4 cup Coconut Flour
  3. 2 TBSP Coconut Oil
  4. 1/2 cup cooked Quinoa
  5. 1 cup cooked sweet potato or a medium sized raw sweet potato chopped
  6. 1 carrot peeled and chopped
  7. 1/3 apple peeled
  8. 1 ripe banana
  9. 2 TSP Baking Powder
  10. 2/3 cup of water
  11. 2 TBSP flax seed prepared – grind in clean coffee grinder, mix with 6 tbsp of water until gelatinous

Directions

Blend in blender until smooth – I go fairly long to ensure all the veggies are mixed fine. Add mixture to plastic sandwich bag, cut a very small tip off of the corner of the bag and pipe onto a parchment paper covered cookie sheet – don’t try it without parchment 😉 Apparently, you can also, just spread on to parchment paper and cut up afterwards. I kinda like the piping!

Baked at 350 for 15-25 minutes – depending on your oven. Use spatula to remove and reuse the parchment paper until you are done. Store in glass container! Should last you about a week if your lil one is a piggy like mine 🙂 Feel free to substitute the veggies for something else. Original recipe called for kale and spinach in place of sweet potato, but C loves sweet potatoes!
