Ingredients
1 cup natural peanut butter with salt (stirred until smooth)
1 cup powdered sugar, sifted
1/4 cup almond meal
1 tsp vanilla extract
1 cups dark or semi-sweet chocolate chips (or chopped chocolate)
1 tsp coconut oil or butter (optional, for smoother chocolate)
Directions
Add all ingredients to a bowl and mix together til completely combined.
Use a cookie scoop or 1-2 tsp of dough to form balls. Place on a cookie sheet and set in fridge for 5 mins.
While the balls are cooling, heat your chocolate and coconut oil in a double boiler over medium low heat.
Once chocolate is melted, dip dough balls in the chocolate and place on a wax paper or parchment covered cookie sheet.
Place in fridge for 30 mins and store in an air tight container.
