Peanut Butter Truffles

Ingredients

  • 1 cup natural peanut butter with salt (stirred until smooth)
  • 1 cup powdered sugar, sifted
  • 1/4 cup almond meal
  • 1 tsp vanilla extract
  • 1 cups dark or semi-sweet chocolate chips (or chopped chocolate)
  • 1 tsp coconut oil or butter (optional, for smoother chocolate)

Directions

  1. Add all ingredients to a bowl and mix together til completely combined.
  2. Use a cookie scoop or 1-2 tsp of dough to form balls. Place on a cookie sheet and set in fridge for 5 mins.
  3. While the balls are cooling, heat your chocolate and coconut oil in a double boiler over medium low heat.
  4. Once chocolate is melted, dip dough balls in the chocolate and place on a wax paper or parchment covered cookie sheet.
  5. Place in fridge for 30 mins and store in an air tight container.
  6. Enjoy!
