Coconut Brownie Bites

Ingredients

  • 3/4 cup almond flour
  • 1 cup powdered sugar (adjust to taste)
  • ½ cup cocoa powder (unsweetened)
  • ¼ tsp salt
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup chocolate chips (dark, semi-sweet, or milk chocolate)
  • 1 tsp coconut oil or butter (optional, for smoother coating)

Directions

  1. Add ingredients to bowl and stir til completely combined
  2. Use a cookie scoop or 1-2 tsp and roll into balls
  3. Place in fridge while you melt your chocolate and coconut oil in a double boiler over medium low heat.
  4. Cover each ball with chocolate and place on a cookie sheet. After 6 balls, sprinkle with coconut flakes. If you do it too soon they will not be as vibrant/visible.
  5. Place in fridge for 30 mins and store in an airtight container
  6. Enjoy!
