Rustic Loaf

Ingredients

  • 3-3.5 cups Flour
  • 2 tps Dry Active Yeast
  • 2 tsp Sugar
  • 2 tsp Salt
  • 1 1/4 cups Warm Water
  • 1 TBSP Apple Cider Vinegar – optional (for a sourdough flavor)

Directions

  1. Bloom yeast in warm water and sugar for 5-10 mins
  2. Add flour and salt to a large mixing bowl or stand mixer and stir together.
  3. Add the bloomed yeast, water, sugar mixture.
  4. Mix together thoroughly (will be slightly sticky), cover and let rest for 1 hr or until it has doubled in size.
  5. Start to preheat the oven to 450F and place dutch oven and lid into the oven.
  6. Punch down the dough and form into a ball – you will need a little extra flour.
  7. Set on a piece of parchment OR dust a flat dish with flour.
  8. Cover with a towel and let rise for 20 mins as your oven is preheating, preferably on top of the stove.
  9. Place dough with parchment into dutch oven OR heavily dust the bottom of your dutch oven and add the dough into the pot.
  10. Using a lame or sharp knife, slash the top of the bread to allow it to release steam.
  11. Bake with cover on for 18-30 mins (this will depend on your oven).
  12. Remove and put on a cooling rack until completely cooled.
  13. Slice and enjoy!
