Sugar-Free Baked Banana Oatmeal Muffins

Ingredients

  • 3 Ripe Bananas, Mashed
  • 2 Eggs
  • 2 1/2 cups Old Fashion Oats
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • 1/2 tsp Vanilla
  • 1 TBSP Olive Oil (Optional)

Directions

  1. Preheat oven to 400F.
  2. Mash Bananas and Eggs together
  3. Add Oats, Baking Powder, Baking Soda, Cinnamon and Vanilla (Oil too) and stir until mixed.
  4. Divide into 12 oiled muffin tins
  5. Bake for 13 mins (or more if your oven is older)

Optional to add a few chocolate chips or coconut flakes or chopped walnuts.
